MUSHROOM MASALA



2 packets mushroom ( cut into 4 and boiled)
2 onions grated
4 small tomatoes blended
2tbsp cottage cheese grated
1tsp grated ginger
2tsp crushed garlic
3tbsp tomato ketchup
1tbsp red chilli sauce
1tsp soya sauce
1tsp black pepper
1tsp roasted cumin powder
1tp red chilli powder
1/4 tsp laung powder
1tbsp coriander powder
1tsp sugar
2tbsp milk
1tbsp fenugreek leaves( kasoori methi)
 1tbsp butter
1tsp turmeric
2 bay leaves
1tsp cumin seeds
salt to taste

 Method
In a wok, add 4 big laddles of  mustard oil. Add a bay leaf and cumin seeds. Saute onions till golden brown, add ginger garlic and saute for a min. Add coriander powder and red chilli powder. Now add tomatoes. Add salt, turmeric , cumin powder, black pepper and laung powder. When the oil starts leaving on the sides of the wok  add 1/4 th cup of water and bring to boil. Add grated paneer and all the 3 sauces.Stir vigrously. Now add the mushrooms. Stir well. Add fenugreek leaves, sugar and milk. Now cover the wok and keep it on sim for 10 mins ( if you think your gravy will burn while keeping it covered, add little water)  Now add butter and mix well. SERVE EXTREME HOT.

TANGY ORANGE SORBET


ngredients

  • 2 1/2  cups  water
  • 1  cup  sugar
  • Orange rind strips from 2 oranges
  • 2 2/3  cups  fresh orange juice
  • 1/3  cup  fresh lemon juice
  • Grated orange rind (optional)
  • Mint sprigs (optional)

Preparation

Combine 2 1/2 cups water and sugar in a saucepan; bring to a boil. Add rind strips to pan. Reduce heat, and simmer for 5 minutes. Strain the sugar mixture through a sieve over a bowl, reserving liquid; discard solids. Cool sugar mixture completely.
Add orange juice and lemon juice to sugar mixture; stir well. Pour mixture into the moulds of your choice.. freeze this mixture for 1 hour or until firm. Garnish with grated rind and mint sprigs, if desired.

SPICY SLICED EGGS


METHOD
Boil  eggs and slice them in a  egg slicer. Sprinkle salt , red chilli and black pepper. Serve hot.

FRIED EGG SANDWICH





3 Tbsp mayonnaise
3 tbsp cream amul tetra pack.
cheese slices 2
Tomato ketchup- 1tsp
 salt
freshly ground black pepper

Dry assorted herbs
1/3 cup  cheddar cheese, shredded
2 Eggs
4 slices of good quality bread
lettuce

onion slices
6 cherry tomatoes, slice

METHOD


Mix the mayonnaise,herbs, shredded cheese , cream, salt and toamto sauce . Microwave it for 20 secs to melt the cheese. Spread the cheesy mixture on to the bread slices .Now place a lettuce leaf and tomato and onion slices slices.Set aside.  In a small skillet, heat a tablespoon of butter over medium heat.  When the pan is hot, add an beaten egg and cook for 3-4 minutes, then gently flip.  Cook the other side for about 30 seconds, then remove pan from heat.  Slide the egg out of the pan and onto the sandwich.  Season with fresh ground pepper and salt.  Top with the other slice of bread.  Serve immediately and enjoy

CHEESE FINGERS


Ingredients
  • Mozzarella CUT INTO STICKS
  •  bread crumbs 1 ½ cup 
  • Beaten eggs 2
  • Cornstarch 1/3 cup
  • 1 tsp dried herbs
  • Flour 2/3 cup
  • Garlic salt ½ tsp
  • Cooking oil for frying
  • Water ¼ cup
Recipe:
  • Take a small bowl and combine eggs and water.
  • Mix bread crumbs and garlic salt and herbs in another bowl.
  • Mix flour and cornstarch together.
  • Heat oil in a big sauce pan.
  • Take cheese sticks and roll in flour mixture then dip in eggs and again roll in the mixture of bread crumbs.
  • Deep fry till golden brown.
  • Crispy cheese sticks are ready to serve with chili sauce

FRUTTY CUPS.

2 cups biscuit  crumbs
3 cups powdered sugar
1/4 cup butter, softened
3-4 bananas, sliced
15-20t strawberries, sliced
1 can crushed pineapple, drained
1 cup chopped walnuts
9- 10 cherries, drained and halved
1 cup cream ( optional, you can add ice cream instead of cream)

vanilla ice cream.



Combine the melted butter and biscuit crumbs. Press into the bottom of your baking dish. Bake at 350F for 10 minutes, then place in the freezer to chill and set for about 10 minutes.
.( bake the biscuit crumbs in the glasses in which you want to serve) Beat the cream  and powdered sugar until creamy.


Spread the cream over the cooled biscuit crust. Add a layer of sliced bananas over the cream . Drain the pineapple and spread evenly over the bananas. Sprinkle  nuts over the pineapple, then add a layer of sliced strawberries and then a scoop of of vanilla icecream and cherry on the top.

STRAWBERRY MANIA


INGREDIENTS
20 STRAWBERRIES
2 CUPS CRUSHED CAKE
1 AMUL  CREAM TETRA PACK
SUGAR 1/2 CUP
LEMON JUICE 2TBSP'
STRAWBERRY ESSENCE ( OPTIONAL)
ROASTED NUTS

METHOD
Puree the strawberries. Now add the puree in a pan with little water. When the water starts to boil add sugar and lemon juice.  Bring to boil while stirring continuously. You can adjust the seasonings according to your prefernce , whether you want to make it more sweet  or tangy. Add the strawberry essence, if desired.  Allow it to cool and refrigerate it.
Now arrange tall glasses . Add ample amount of this strawberry sauce, then crumbled cake, then the  cream and repeat once more with the layers. Garnish with the nuts and strawberries , YOU can add the praline powder also.
